My dough was also somewhat soft, slightly sticky.<br /><br />While I have mastered making the indentations with the fork, if I am making these for just the 2 of us, I might not bother. It significantly adds to the prep time vs just cutting them like small noodles. <br /><br />I have made my gnocchi with both microwaved and baked potatoes. The baked adds a sweetness and is worth the extra time (plan ahead).<br /><br />I have both a ricer and a food mill--the food mill is great for making tomato sauce. So I substituted with black bean garlic sauce and hot Serbian paprika. It worked.<br /><br />I call this Asian Cajun--I had the trinity with the onions, celery and green pepper and the Asian sauce. Tasty! Then I grew out of it maybe because there are so many good yogurts in the grocery stores now (there weren't then). Getting the Donvier yogurt maker was the jump start for me and I'd forgotten how easy it is. This would be hard to teach in that you couldn't have the end product by the end of class. It takes about 45 min to warm up and cool down the milk, maybe 5 min actual prep time. But you could do all of this and then use yogurt from a previous batch in the class.
